I was lucky enough to be sent on a safari tour with work that took us to Zimbabwe, Botswana and Zambia. We did the usual animal safaris, night drives and elephant back riding, but the pinnacle of the trip for me was going white water rafting down the Zambezi river, just at the bottom of Victoria Falls.
There were 16 of us that decided to brave the waters, so we made the 30 minute hike down the cliffs through the jungle until we arrived at a calm pool of the river. By this time, most un-fit people were exhausted, but we jumped right into the rafts and started our quick lesson on how to navigate and steer in the waters. Oh, and this is when they told us about the crocodiles that linger in the calmer waters....
After about 15 minutes, we headed down the first set of rapids. It was an exhilerating experience as we held on for our lives! We made it through the first set, but the guide then informed us that there were many more ahead....apparently that was a mild rapid we had just been on.
Now, I knew it would happen, but not in the first ten minutes....we hit a massive rapid and all flipped out! I've been rafting before and actually don't mind getting a bit wet, but when there are crocodiles in the water it makes it a bit different! I have never swam so fast in my life to find the boat and get back into it before I would be eaten alive.
We made it through to the end of the experience and all felt exhausted, exhilerated and thankful we all came out in one piece.
I'd recommend white water rafting to anyone, especially if you can do it in a beautiful part of the world such as Victoria Falls. It's a shame about Zimbabwe's problems, but I believe you could get to it through Zambia.

Question: how easy is it to get back in the dingy after falling out? I want to try those rapids, but Im afraid to be stuck outside the boat after I fall out... sounds awesome by the way!
