This isn't actually my experience, however, it's such a fantastic piece of video i felt compelled to post it here. B3ta.com newsletter puts it better than i would:
"Guy sticks his digital camera on the little conveyor belt in a late night Tokyo sushi bar, producing results that vaguely remind us of that excellent nightclub tracking shot in Goodfellas. Of course, it wouldn't be nearly as good if you did that in London. Someone would nick it."

I really enjoyed visiting the Tsukiji fish market. You have to be up early though!

So delightful -- I miss Japanese kaiten-zushi bars so much, I could watch this over and over again. I only wish I'd thought of it first!
Amelia, if you haven't been I'd really recommend the yakitori stalls under the tracks by Yurakucho Station if you're looking for the old Tokyo downtown from before the skyscrapers.
